With the weather warming up and Summer holidays around the corner, we’re sharing some of our favorite Summer Treats with you!
“Growing up, Oreo Cookie Freeze became famous around our house during the summer, especially when someone’s birthday rolled around. It’s a simple treat that’s sure to please. Enjoy!” — Laura
Oreo Cookie Freeze
28 Oreo cookies – crushed
1/4 c. butter – melted
1/2 gallon coffee ice cream – or any flavor
1 c. sugar
1 small can evaporated milk
1 tsp. vanilla
4 squares semi-sweet chocolate
6 T. butter
1 large carton Cool Whip
1 c. pecans – chopped fine
Combine melted butter and cookies. Mix and spread in 9×13 inch pan and freeze. Allow ice cream to soften. Spread on cookies. Refreeze. In a saucepan, place sugar, milk, chocolate, and 6 T. butter. Allow to boil for 1 minute. Remove and add vanilla. Let cool. Pour over ice cream. Refreeze. Spread Cool Whip on top of chocolate mixture. Sprinkle with nuts. Refreeze.
NOTE: Melt 2 T. of butter and mix nuts in. Spread on baking sheet and toast in 300 degree oven until light brown. You will need to stir nuts often while toasting. Let cool, then sprinkle over Cool Whip. Makes 12 3×3 squares.
“This strawberry-basil lemonade is really easy. And it’s actually best when you let it sit for a couple of hours.” — Russ
1 gallon lemonade
1 pint fresh strawberries
1 bunch basil
Cap the strawberries and cut in half. Give the basil a rough chop and toss in a pitcher with the strawberries. Pour in the lemonade and stir.
NOTE: This is best after the flavors mix together for a couple of hours. When ready to serve, add ice to the pitcher and give it a good stir.
Red, White, and Blue
1 1/2 Cups Cool Whip or Whipped Cream
1 Sponge Cake (8 inch, either store bought or home made) cut into chunks
1/2 cup Blueberries
1/2 cup strawberries, sliced
Line up your individual bowls or cups. Drop a dollop (a spoonful) of the cool whip or whipped cream in the bottom, then put a few chunks of the sponge cake on top of the cool whip, then fill the glasses with more cool whip and top with blueberries and a sliced strawberry.
